I always go light on cheese, heavy on veggies :) | Coming home after a long day of work and trying to think of something quick to make for dinner is an ongoing battle. I try to keep my kitchen stocked with plenty of fast cooking options. One of the meals I fall back on often is homemade pizza. I've always had a soft spot for pizza, so it's one of my favorite meals after a hectic day. You can buy frozen whole wheat crust or ready made crust, or just whip up your own in less than 5 minutes. I always keep a couple packets of pizza yeast in my pantry. This yeast doesn’t require much kneading or any rising time. Just mix together the ingredients, knead for a few minutes (opportunity to work out some of your workday stress!) , and roll it out on your pizza pan. The dough recipe on the yeast package calls for all-purpose flour, but I'll typically sub half of the called for amount for whole wheat flour. I’ll either top it with a brushing of olive oil with garlic or pizza sauce. Add a sprinkle of mozzarella and top with lots of veggies. This is a great opportunity to use those last couple mushrooms or slices of bell pepper. Serve with a nice mixed green salad to balance out your plate. |
